How To Make A Delicious And Easy Butternut Squash Soup

Keeping things simple for myself is key when I am hosting. I would suggest adding this butternut squash soup recipe to your meal plan for Thanksgiving. I love to serve this during the day before the “big meal” on Thanksgiving. You can make it a day or two before then on the day of put it in the crockpot. Set out some bowls for family to serve themselves during the lunch hour. It could also make a great appetizer. When we plan our Thanksgiving, we have the house filled with appetizers prior to the big feast. This soup is great to munch on before we sit down to eat together.

This butternut squash soup is easy to turn it into a full meal.  I love to pair it with a simple grilled cheese or one of my favorite side salads, I love this Farmhouse Soup and Sandwich set from Crate & Barrel.  The recipe makes a large batch and I can use it over several days for a quick lunch or an addition to any dinner plan.  My goal is to make my life easier for when I am on the run.  Simplicity is key, especially this time of year.

This recipe takes very little prep time, a few minutes of stove top cooking and the rest of the work is done in the crockpot.  It is super easy! I like to do the extra step on the stove top to meld the flavors together for a savory and healthy meal.   I would suggest honey crisp apples, they are my favorite. One benefit of butternut squash is it is low in calories.  There are less than 75 calories per serving of butternut squash.  It is also one of the healthiest vegetables with tons of vitamins A, E and B-6.  It even has more potassium than a banana!  All good things to think about when heading into the cold and flu season.

Butternut Squash Soup

Ingredients

  • 1 large butternut squash pitted, peeled and chopped
  • 2 large apples peeled, cored and chopped
  • 1 yellow onion peeled and diced
  • 4 large carrots chopped
  • 1 box low sodium vegetable broth
  • 2 cloves garlic peeled and minced
  • 1 tsp nutmeg

Instructions

  1. Saute veggies, apples and seasoning on stove top in oil.  Add additional salt and lots of pepper to taste.  Once they are soft add all ingredients into a crock pot.

  2. Cook on low for 6 hours.

  3. Mix cooked ingredients in blender until smooth.  Top with croutons and parmesan.  For an additional option you can add some cream to soup for added creaminess.
