My family and I love having company, especially during the summer months. While entertaining can be fun, preparing the food can be exhausting. Thankfully, our friends and family are always willing to chip in and bring something yummy to eat. As often as we entertain, it can be hard to stay healthy. Recently, my friend decided to bring over a kale salad. I appreciate the fact that she and her family make it a priority to eat healthy. I like to use superfoods, such as kale, as much as possible in recipes. Kale is great for cardiovascular support. It is an anti-inflammatory food filled with omega-3 fatty acids that help fight against cancers and autoimmune diseases. Kale is also known to be high in iron, fiber, vitamin K, A and C and calcium. It’s great for detoxifying your body and keeping your liver healthy. With all of these nutritional benefits, you might think it won’t be appetizing; but I guarantee this salad does NOT taste like paper towels and your family will love it!

Ingredients

  • 4 cups kale, finely chopped
  • 1/2 cup red cabbage, chopped
  • 3/4 cup dried berries
  • 2 green apples, finely chopped
  • 1/2 cup edamame
  • 1/2 cup raw sunflower seeds

For the dressing

  • 3/4 cup oil
  • 1/4 cup white balsamic or apple cider vinegar
  • 1 tablespoon maple syrup
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt

Instructions

  1. Combine salad and dressing, salt and pepper to taste.
