Valentine’s Day Cocktail

Even though romance is in the air, sometimes it can be a little difficult to find time for you and your loved one.  I know some years my husband and I were so busy we weren’t able to celebrate Valentine’s Day properly.  It can sometimes be a lot of pressure on what one should or should not expect. If you don’t have extra time on your hands I suggest a romantic toast to each other with this delicious Valentine’s Day Cocktail.  It’s something you can make at home, sit by a fire and have some quiet conversation (after the house quiets down for the night)!  This recipe is simple and yummy!

Ingredients

  • 1 ounce Cinnamon Schnapps
  • 1 ounce Vodka
  • 1 splash Grenadine

White Chocolate Dipped Cherries

Valentine’s Day is fast approaching and I usually make sugar cookies for my family.  This year I wanted to try something new.  I came across these white-chocolate covered cherries and had to give it a try. It was tricky finding cherries this time of year but I prevailed.

This recipe is super simple and doesn’t take a lot of time.  It is elegant looking and they taste really good!  For starters, I dipped them in the microwavable Ghirardelli White Chocolate melting wafers.

Immediately after covering them in chocolate I sprinkled some edible crystals.   You can get creative and use edible pearls, red sprinkles or confetti.  Make sure to pop them in the refrigerator when done assembling.  They will stay fresher and taste way better.

4 Fabulous Winter Hats

Today I am sharing some of my favorite hats and while most people think wearing a hat is “just to keep warm” I consider it more of an accessory.  I have always loved hats and the more I experiment with them the more I enjoy wearing them.  A few years ago, I was at my mom’s house and I saw in her closet my grandpa’s old Stetson hat.  I recognized it right away and with joy I took it out and tried it on.  I was very close to my grandpa growing up and I remember him wearing it all of the time.   I immediately exclaimed to my mom that I wanted to have his hat when she was ready to part with it.  She laughed and said not yet.  Well, two years later my mom and dad had it cleaned and gave it to me for Christmas!  I was so excited to have it!  When I put it on I could feel the indent from my grandpa’s thumbprint from where he put it on. It is so cool!  Every time I wear it is like he is with me! While I have the sentimental connection to fedoras, I think it is one of those hats almost anyone can pull off!

I love this wide brimmed hat.  It is dramatic and has some mystery to it.  I used to feel like it was a little big but then I decided to just wear it and not worry about what it may or may not be!

One of my long-time favorites is my bucket hat.  I have had it for years.  I don’t wear it as much as some of the others but it makes me feel like I just stepped out of the 20’s and it is so classic!  Whenever I wear it I get so many compliments.

During the winter season we all need a good warm weather hat.  This Wigwam hat is so warm and stylish.  A friend of mine gave it to me from All USA Clothing.  I wear it for those times when it is really cold outside!

Garlic Shrimp with Zoodles

Is anyone else watching what they eat because they over indulged during the holidays?  I’m in that boat right now!  I love this Garlic Shrimp with Zoodles recipe because it is healthy and low in calories.  This recipe is full of nutritious ingredients and packed with taste.  Zoodles (zucchini noodles) take on whatever flavors you add to them.  I love spice and in this recipe, there are chili flakes which is one of my favorites!

If you don’t have a spiralizer highly recommend it.  They are reasonably priced and I have had mine for several years.  I may not use it every week but it’s great to have for recipes such as this. Let me know if you and your family try this recipe and what you think!

Zoodles and Garlic Shrimp

Garlic Shrimp with Zoodles

Ingredients

  • 6 zucchini washed
  • 1 pound shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 3/4 teaspoon chili flakes
  • 1 lemon, squeezed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Using a spiral slicer, cut the zucchini into noodles and place them into a colander over a bowl or in the sink.

  2. Sprinkle the zucchini with salt and toss to combine. Let the zucchini sit for 15 minutes while the salt extracts the moisture.

  3. Meanwhile, combine garlic, paprika, chili flakes, lemon juice, and shrimp in a bowl and mix well.

  4. Heat the olive oil in a large skillet over medium heat. When the pan is hot, add the shrimp and season with salt and pepper. Sauté until the shrimp change color.

  5. Rinse the zucchini under running water to remove the salt and dry on paper towels.

  6. Add the zucchini noodles and parsley to the skillet, stir for 3-5 minutes until tender.  I like to add even some additional garlic powder.   Toss to coat and serve.
