I am excited to share with you this delicious fresh apple salad recipe. When I need a hearty salad to keep me fuller longer this one does the trick. It has healthy proteins, good fats and full of nutrients. I have a blog post on how to cook the perfect hard cooked egg. Make sure to check it out before starting. I’ve also used this honey cider dressing on food other than this salad, like turkey meatballs and grilled chicken. I love the fact that I am using my homegrown honey for the dressing recipe. Make sure to add your own twist to this apple salad recipe. For example, I love Honey Crisp Apples and you may love Granny Smith. Fresh Apple Salad with Honey Cider Dressing
Ingredients
- 8 cups spring mix
- 4 hard-cooked eggs sliced
- 1 favorite apple thinly sliced
- 1 avocado diced
- 1 roasted sweet potato diced small
- 1 cup dried cranberries
- 1 cup pecans
- 1/2 cup pumpkin seeds
For The Dressing
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 1/3 cup mustard
- 2 tablespoons honey
Instructions

Arrange eggs, apple, avocado, sweet potato, dried cranberries pecan and pumpkin seeds over spring mix.

Combine dressing ingredients in blender and blend until smooth.
