Baked Salmon is one of my favorite dishes! I am always looking for a fresh and easy recipe for salmon. It can sometimes get boring and this recipe with the Teriyaki sauce is amazing! My sister in law, Lynne, made it at one of our family gatherings. I couldn’t get enough of it and ate so much I was starting to feel embarrassed. Have you ever done that before? Please tell me you have! Anyway, I had to ask her how she made it and where she got the fish. Fortunately, it’s a quick and easy salmon recipe hence the title of this post! Since I started eating this, I’ve never gotten sick of it!
For the recipe, I prefer to buy Scottish Salmon. You can purchase it at most local grocery stores. It costs a little more than Atlantic Salmon but it is worth it. Scottish Salmon is farm raised however from what I have been told they raise them in a better setting than most other typical farm raised fish. The Scottish Salmon is also a little more fatty and it gives it the buttery taste that I prefer. I love to pair it with my fresh apple salad with honey cider dressing. Baked Salmon
Ingredients
- 1 pound Scottish Salmon
- 1/2 lemon, squeezed
- 1/4 cup teriyaki sauce
- 2 tablespoons capers
- 2 tablespoons olive oil
