5 Star Black Bean Corn Salsa

A good friend gave me this black bean corn salsa recipe about 17 years ago, it has been such a hit on many occasions and I’ve passed it on to so many people I’ve lost count.  The best part is it’s fresh and healthy!  After my husband tasted it, he started requesting it all the time. Being the good wife that I am, I made it for him.  And I made it.  And I made it.  I made it so much for several summers in a row I got to the point where I actually couldn’t stand the look or smell of it any more!  Lol!  I finally mustered up some motivation a few years ago and brought it back to the table. My husband was so excited about it, he actually hid a small bowl in the refrigerator from our guests.

The best part about this salsa is it pairs nicely with a variety of different items.  It’s a great side dish to grilled chicken and tastes terrific on top of scrambled eggs.  We love it the most when used as a traditional salsa with yummy organic tortilla chips.  One of my favorite brands of chips is FullCircle.  They are reasonably priced and easy to find.

In addition to tasting delicious, there are many benefits to this salsa.  It contains black beans, which recent research shows can provide support to your digestive tract and help support the growth of desirable bacteria in the colon. They have also been known to help regulate the body’s blood sugar levels.  Another beneficial ingredient is the (red) bell pepper.  Studies have shown that bell peppers are one of the top two foods that provide the most carotenoids.  Carotenoids are helpful in reducing the risk of diseases, especially cancers and eye disease.

What I love most about this recipe is that the ingredients are easy to keep on hand.  If you don’t have access to mango’s during different seasons, you can substitute peaches like I did for this video, or try some other favorite fruit.  I would love to know how many stars you give this black bean corn salsa!

Black Bean & Corn Salsa

Ingredients

  • 1/2 envelope 'Good Seasons' Italian Salad Dressing Mix
  • 1 can (16 ounces) black beans, drained & rinsed
  • 1 package (10 ounces) frozen corn, thawed
  • 1 cup peaches, chopped
  • 1/2 cup red pepper, chopped
  • 1/3 cup cilantro, chopped
  • 1/3 cup onion, chopped
  • 1/4 cup lime juice

Instructions

  1. Make salad dressing according to envelope instructions, mix all ingredients and serve with your favorite chips.

    I love love love this salsa! I’ve had it with mangos and not peaches but either sound great. So good and addicting!
